8 Can Tortilla Soup

I’ve been seeing this recipe all over pinterest (like here & here) and haven’t found the original source. I decided to try to combine them & try it myself!

Some are called 6 can and some are called 7 can- I somehow ended up with 8 cans and a packet… doesn’t quite have the same ring to it :)

All you do is dump everything into the pot & stir. I used my crock pot on high for 1 hour, just long enough to soften up the beans.

Then, I scooped it into 6 Gladware (Soup/Salad sized) tupperwares. I put 5 in the freezer & had one for lunch this week! I plan to bring one for lunch every week for the next month or so. I love have ready made food- the last thing I want to do in the morning is prep a lunch!

  1. Dump everything into a crock pot and stir.
  2. Cook on high for one hour.
  3. Enjoy hot or allow to cool completely and store in the fridge or freezer in individual portions for an easy grab and go meal!

  1. I am retired but I still love cokoing in my CrockPot. recipes are endless and so good. I make a beef roast in mine and use three seasoning packets, Ranch, Peppercorn and Italian. Out of this world taste.
